A historic enclosure located on the upper half of the hillside and facing east, it was the first plot cleared, landscaped and planted in 1981 by Pierre Gaillard. The light granites and its orientation bring minerality and freshness to the Syrah.
VINIFICATION & AGEING
The vinifications are traditional. The grapes are destemmed beforehand so that the wine retains all its elegance. The extraction is gentle and long in order to obtain silky tannins. Put in barrels before the start of malolactic fermentation, the wine gradually blends with the wood. Regular oxygenation during the ageing process allows a beautiful fruit to be expressed.
TASTING
It is a Syrah of great elegance, with notes of fresh fruit that evolve towards spicy notes, but also cocoa, slightly smoky dried leaves. The freshness, the true backbone of this wine, is sublimated by the notes of pepper and spices. The tannins are tender and persistent, making it a wine of great nobility. It will be delicious accompanied by a juicy Black Angus steak grilled with vine shoots, with a pan-fried porcini mushroom or duckling on a spit with tobacco leaf, short juice with Timut pepper.
